SALTY OLD SOUL | GOSE
4.13% ABV / 6.5 IBU
This slightly salty, slightly sour beer is a traditional take on a 16th century German style. Hazy golden with a fluffy white head, this wheat ale gets its distinctive tartness from kettle souring with Lactobacillus. Additions of fresh ground coriander and a pinch of Himalayan pink sea salt add herbaceous flavors and a citrus twang, finishing off with a dry, refreshing crispness.
BOYSENBERRY BERLINER WEISSE | BERLINER WEISSE
4.8% ABV / 6.9 IBU
Like Springtime in a glass. This kettle soured wheat beer pours brilliant pink thanks to the addition of boysenberry. The aroma teases blackberry and raspberry sweetness, which is well balanced with subtle lactic tartness. Sweet and sour flavors mingle without either overpowering the other. Light and refreshing, this spring sour is perfect for welcoming in the warmer weather on the patio.
KCCO | AUSTIN STYLE LAGER
4.0% ABV | 15 IBU
Introducing the KCCO (Keep Calm and Chive On) Austin-style Lager in collaboration with the local entertainment media company, Chive Media Group. As easy going as Austin, this cool, clean, fresh pale lager is light, malty and balanced, with a crisp, dry finish.
KNUCKLEBALLER KOLSCH | GERMAN STYLE KOLSCH
5.4% ABV | 27.5 IBU
Pale golden with a fluffy white head. Delicate fruit aromas of pear and sweet apple. Light fruit flavors are detectable with a light body and a dry, crisp finish. Refreshing and effervescent, this drinks like summertime in a glass.
ABBAYE DE GEMBLOUX | ABBEY LAGER
7.2% ABV | 28 IBU
An Abbey-style Tripel by design, this beer crashes into a whole new category because of the use of Pilsner yeast instead of traditional Belgian Ale yeast. The result is a complex weave of tastes. Sweet, biscuity flavors mingle with delicate hop spiciness, and the beer is all at once full bodied and refreshingly dry.
LEMONGRASS WIT | WITBIER
5% ABV | 15 IBU
This bright, effervescent summer ale is a twist on the classic Belgian recipe, with lemongrass, orange peel, and pink peppercorns added. The result is a lightbodied wheat ale with fruity esters, lemon-honey sweetness, and just a touch of spice.
BARTON SPRINGS | PALE ALE
6.6% ABV | 45 IBU
This pale ale is as refreshing as Austin’s favorite swimming hole. Bitter undertones combine with citrus and floral aromas while light crystal malts add sweetness and copper color.
GREEN ROOM | TEXAS IPA
7% ABV / 70 IBU
The Green Room is a happy and hoppy beer that strikes all the right chords. This tasty brew tunes up the taste buds with some intense grapefruit flavors. Herbaceous aromas sustain the experience which finishes with bright citrus notes.
SHRIEKING EEL | AMERICAN IPA
7% ABV | 69 IBU
This bold IPA is made with Amarillo, Chinook and Citra hops. It’s floral and fruity with prominent orange and grapefruit flavors and a pique of pineapple. It has healthy supplies of bitterness that are well balanced with just a hint of sweetness leaving a dry, slightly resiny finish.
EQUINSU OCHA | WHITE STOUT
5.3% ABV | 35 IBU
To make this uniquely pale stout, we removed the dark, roasted grains that give stouts their distinctive color and added local cacao nibs and coffee beans to replace the rich, roasty flavors that those grains also provide. The result is a full bodied summer stout with roasted coffee flavor, hints of semi-sweet chocolate, and a dry, roasty finish. Looks can be deceiving. Close your eyes and take a sip.
SHOKOLAD | RUSSIAN IMPERIAL STOUT
9.5% ABV | 45 IBU
Our winter seasonal is a Russian Imperial Stout with huge amounts of local cocoa nibs from Srsly Chocolate, which add flavors of dark cherry, plum, and chocolate to this full bodied brew. The result is a boozy, roasty, chocolatey stout that wraps you in warmth.

The Uncle Billy’s Barrel Aging Program began in the summer of 2018. Most beers are aged in our very own Bourbon Barrels once the distillery team has emptied them, but on occasion we will source outside barrels from other distilleries or wineries. This program is ongoing, and tap will change often, so be sure to ask your server or bartender for the current selection.
